Hellshire Beach in Portmore, St. Catherine, is the Kingston Sunday-lunch institution. A strip of painted wooden shacks along the sand buys fish direct from the boats that land through the day, then fries it to order — traditionally parrotfish or doctorfish — with festival dumplings, bammy (cassava flatbread) and escoveitch sauce. Prices are by the pound, washed down with Red Stripe or sky juice. The beach has lost sand to erosion over the years, but the Hellshire food tradition remains one of the great set-piece meals in Jamaica.
